Ok before I talk about today's recipe I just have to say that as of this week I am now 10 pounds away from my overall goal weight! I can't believe it myself but I had been stuggling the last few weeks. I had my daughters birthday party and Easter so when it came to eating I wasn't being that good. I mean it's ok to indulge every once and a while right? Well I had not stopped exercising because I'm doing Turbo Fire and I didn't want to quit doing that. So on some advice from a friend on one of my weight loss groups I decided last week not to weigh in and just get right back on track. I made myself recommit 100% to weight watchers and no cheating! If I ate it I wrote it down. I also kept doing my exercising (I'm actually on week 4 and need to do my measurements on Monday). Well whatever I did worked because from my last weigh in two weeks ago I lost 2.5 pounds! I was shocked when I stepped on the scale. I still can't believe it but I'm extremely thrilled with myself. I was a little worried because I was sick this week but maybe that worked in my favor lol. No not really but you get what I'm saying. Getting to my goal weight by my birthday is looking pretty doable right about now! And now onto today's recipe.
I had seen today's recipe floating around Pinterest for quite a bit. It promised that with this one ingredient your cookies would be soft and chewy. I was intrigued because my chocolate chip cookies usually came out kind of crunchy, so I clicked on the pin and looked at the recipe. Turns out the one ingredient is cornstarch and they weren't wrong. My cookies did come out pretty soft and chewy. It was a nice change from the cookies that come out crunchy and crumbly. Even the dough was a nice soft dough and not super sticky. It was hard to resist eating it before it went on the pan hehe. I'm not sure if they are the softest ever but they were for me :-)

Softest Ever Chocolate Chip Cookies
Ingredients:
3/4 c. unsalted butter, softened
3/4 c. brown sugar
1/4 c. granulated sugar
1 egg
2 tsp. vanilla extract
2 c. all purpose flour
2 tsp. cornstarch
1 tsp. baking soda
1/2 tsp. salt
1 c. bittersweet chocolate chips
Directions:
1. Preheat oven to
350 degrees F.
2. In the bowl of a
stand mixer fitted with a paddle attachment, cream together butter and sugars
until fluffy and light in color. Add egg and vanilla and blend in.
3. Mix in flour,
cornstarch, baking soda and salt. Stir in chocolate chunks.
4. Using a
standard-sized cookie scoop or tablespoon, drop dough onto a prepared baking
sheet. Bake for 8-10 minutes, until
barely golden brown around the edges.
5. Let cool, on the
sheet, on a wire rack for five minutes.
Remove from baking sheet and let cool completely.
I don't remember exactly how many I made but the original poster said they make about 3 dozen.
These are 3 PPV per cookie.
They are evil little things and I had to hide them so I wouldn't eat them. I actually had to give them away to my friend Tasha so I wouldn't eat them all haha!
I'm thinking the next time I make these I might add some cocoa powder in and make them a double chocolate chip cookie.
I have nothing really bad to say about these. They didn't spread out as much as I thought so if you want them to be more like a flat cookie maybe push them down a little bit so they don't stay as round as mine did.
